With our busy schedules—between work, school, and extracurricular activities—there’s little time for elaborate dinners. Sometimes we eat at 4:30 p.m., other times at 7:00 p.m., so I need simple meals that require minimal prep. And after a long day, the last thing I want to face is a sink full of dishes. That’s why my shortcut chicken Parmesan is a lifesaver.
I started making this dish a few years ago, and it quickly became a family favorite, especially with my 11-year-old. When a meal gets unanimous approval from the whole family, it’s a keeper.
We love Tyson Panko Breaded Chicken Breast Tenderloins from Costco. When they’re topped with marinara sauce, melted cheese, and served over noodles, they become a real treat.
Whenever I’m at Costco, I make sure to pick up a bag of panko chicken from the freezer section, along with spaghetti, a couple of jars of Rao’s marinara sauce, and some mozzarella to prepare this easy chicken parm.
How To Make Costco Chicken Parmesan
I usually prepare enough for eight servings each night, so my husband has leftovers the next day. Adjust the amounts as needed for your family.
– 8 pieces Tyson Panko Breaded Chicken Breast Tenderloins
– 1 (28-ounce) jar Rao’s Homemade Marinara Sauce
– 1 (16 to 18-ounce) package spaghetti
– 8 slices mozzarella cheese (or shredded mozzarella)
1. Preheat the oven to 450°F.
2. Arrange the chicken on a baking sheet and bake for 20 minutes. Flip the chicken and bake for an additional 7 minutes, or until the internal temperature reaches at least 165°F.
3. While the chicken is baking, bring a pot of water to a boil and cook the spaghetti according to the package instructions. To time this with the chicken, start the pasta about 10 minutes after the chicken goes into the oven. Drain the spaghetti and toss with a little olive oil to prevent sticking.
4. Once the chicken is cooked, turn on the broiler to high. Spoon marinara sauce generously over each piece of chicken (we use nearly the whole jar). Place a slice of mozzarella on top of each chicken piece, or use shredded mozzarella if you prefer.
5. Broil the chicken until the cheese is melted and bubbly, watching closely to prevent burning. Divide the spaghetti among plates and, if desired, spoon additional marinara sauce over it. Top the pasta with the chicken and serve.
Why My Family Loves Costco’s Panko Chicken
If you haven’t tried this chicken from Costco, it’s worth adding to your shopping list. It’s a staple for us because it’s versatile and easy to prepare.
The light breading provides a crispy texture without being greasy, and one piece is often enough to satisfy one or two people. Here are some other ways we enjoy panko chicken:
– Cut into strips for chicken wraps
– Chopped and used on BBQ chicken pizza
– Added to chicken noodle casserole
– Incorporated into chicken piccata casserole
– Used in tacos, like crispy chicken tacos with habanero salsa
